Dr. K’s Prescription for Happy Healthy Children:
One Week Menu for a Family of Four
Today’s breakfast includes calcium containing cheese and milk, also providing protein to begin the day. Extra fiber is provided by the whole wheat bread and banana.
A yogurt and apple for the afternoon is a simple way to provide nutrients without interfering with dinner.
Dinner includes pasta, well liked by young and old. The meat sauce we have in the freezer, together with grated Parmesan cheese is used as the sauce for the pasta.
If there is still some small amount of roast leftover, cut it in small pieces and add it to the pasta as well.
Cucumber and tomatoes add fiber, flavor and texture to dinner.
This menu is for families with school age children who will be eating lunch at school. Please consider packing your child’s lunch to provide healthier food choices.
BREAKFAST:
1 banana
1 whole-wheat toast with 1 slice of cheese
1 glass of milk
AFTERNOON SNACK:
1 yogurt
1 apple
DINNER: Pasta & Salad
Multicolor bowtie pasta with Parmesan cheese and meat sauce
Cucumber and tomato salad
Ingredients:
¾ of a 1 lb. bag of multicolor bowtie pasta
sauce from the meat dish cooked on Sunday (defrost in refrigerator)
1 cucumber.
1 tomato
Dill weed
grated Parmesan cheese
olive oil
vinegar
Preparation:
Cook the pasta in abundant water and a pinch of salt until tender, about 15 minutes. Drain and set aside. Add about 2 tablespoons of grated Parmesan cheese and the sauce from the meat you defrosted. If you still have some small pieces of meat from the Meat and Vegetable dish, cut it up in small pieces and add it to the pasta as well.
Cut the cucumber and tomatoes and add a small amount of olive oil and vinegar. Add dry dill weed.
